Every time I make these tasty cookies, they don't last very long! They are chewylicious!
- 1 1/4 cups wheat Flour
- 1/2 teaspoon Baking Soda
- 6 tablespoons egg whites
- 1/2 cup White Sugar
- 1 cup room temperature Butter
- 2 teaspoons good Vanilla Extract
- 1 cup Packed Brown Sugar
- 3 cups Oatmeal (quick oats)
- 1 1/4 cup semisweet Chocolate Chips
You want to start by preheating your oven to 325 degrees. Melt 1 cup butter to soften...If the butter is already room temperature, this might only take 20-30 seconds.
In a large bowl; (or kitchen aid mixing bowl) add soften butter, 1 cup brown sugar, 1/2 cup white sugar and blend together with a kitchen aid paddle attachment.
Add egg whites, blend...and then mix in 2 teaspoons vanilla extract.
Add 1 1/4 cups flour and 1/2 teaspoon baking soda and mix together with a spoon (or kitchen aid paddle attachment) just until blended.
Add 3 cups oats, I like to add in small parts for easier mixing. Combine.
Add 1 1/4 cup chocolate chips.
Use a tablespoon to help form heaping balls. Do not press the balls down, leave them in ball form. That way they don't become flat. =)
Place on an un-greased baking sheet. This will also prevent the cookies from becoming flat. Bake for 11-12 minutes.
Cool cookies on baking sheet for about 2-3 minutes before transferring to a cooling rack. Transfer the cookies carefully to cooling rack.
