Banana Bread with cinnamon and pumpkin spice






Once I discovered how to make banana bread, I also discovered just how much I love it! It's really quite simple to make, and the end result is so tasty...anytime of the day! 

 To make Banana Bread you will need: 
  • 1 cup granulated sugar
  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 2 large eggs
  • 3 ripe bananas (the star of the show)
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • A dash of Pumpkin Spice -optional- 










Directions:

Preheat your oven to 325 degrees and butter a 9x5x3 loaf pan/dish.
Cream 1 stick room temperature butter and 1 cup granulated sugar in a large mixing bowl until light and fluffy, as you can see below.
Add 2 eggs one at a time...beat well after each egg. I'll call this the creamed mixture, set this bowl aside for now.












In a small bowl, mash 3 ripe bananas with a fork.
Mix 1 tablespoon milk and 1 teaspoon cinnamon into the bananas.

In a medium bowl: combine 2 cups flour, 1 teaspoon baking powder and 1 teaspoon baking soda together with a fork.















Add the banana mixture to the creamed mixture and stir with a spoon until combined.















Add the dry ingredients, mix until the flour disappears.




Pour batter into the prepared loaf pan. At this time, I sprinkle pumpkin spice and a little extra cinnamon on top and swirl it into the batter with a butter knife or fork. 
Bake for 1 hour to 1 hour and 10 minutes, until a toothpick inserted comes out clean. Let cool for 15 minutes. 













Isn't it beautiful? 
Spread the slices with butter or serve with ice cream!
